A chat recipe quite popular in Mumbai made from yellow peas
in form of a curry served over delicious potato patties and then garnished on top with finely chopped raw vegetables and chutneys.

Serves 2 plates
Ingredients for ragda:
1 cup yellow peas (vatana)
½ teaspoon red chilli powder
1 teaspoon salt
1 big boiled potato (russet)
1 teaspoon salt
½ teaspoon red chilli powder
¼ teaspoon turmeric powder
Garnishing on top
2 tablespoons tamarind dates chutney
1 cup finely chopped celery/radish
½ cup finely chopped cilantro
some garam masala to sprinkle
red chilli powder to sprinkle (optional)

Process: Soak for an hour yellow peas in hot water. Cook the yellow peas along with the remaining ingredients, in double quantity of water until they are completely soft. The peas with water should be of medium consistency. You may even blend them slightly.Mix the ingredients of patties together and make equal size round flat patties from it. Heat a non-stick pan and place the patties on the pan. Cook both the sides on medium heat till they turn golden brown in color.
Take a plate, pour the yellow peas curry in it. Place two patties and pour curry again on top. Pour a tablespoon of chutney, garnish with celery and cilantro.
Sprinkle some garam masala. Make two plates in this way and serve hot.
