This Pulao is all about coconut, to all those coconut lovers try this simple yet delicious Goa’s rice cuisine mild in flavour and rich in health.
Serves 3 Ingredients 1 cup coconut milk 1- ½ cups long grained rice (basmati) (washed thoroughly and soaked for 30 minutes) ½ tablespoon coconut oil or sunflower oil 1 cup shredded cabbage or celery 2 Cloves 1 regular stick of cinnamon 2 Cardamoms ¼ cup green peas ¼ cup fried cashews ½ tablespoon salt Fresh chopped cilantro and grated coconut for garnish
Heat the oil in a medium pot, add the cabbage, cloves, cinnamon,
cardamom and sauté on a medium heat for 1 minute.
Add the green peas and sauté again for a minute or 2. Add the rice, coconut milk, cashewnuts , 2 cups of water and salt, mix well. Cook on medium heat and once it starts boiling then reduce the heat to low, cover with a lid and let it simmer so that it cooks well. Keep on checking the rice at intervals. Once all the water is absorbed and the rice is cooked then turn off the stove and let it sit for 5 minutes. Garnish with grated coconut and cilantro on top. Coconut Pulao is ready to serve.
