This is a quick and easy recipe on how to make Ekadashi sweet recipe called Sandesh. Sandesh is one of the famous Bengali sweet mixed with saffron, perfect texture and flavour.
2- ½ cups of freshly made paneer
¾ cup of powdered sugar
few drops of food color
1 teaspoon cardamom powder
Process: Please see the recipe to make fresh paneer or curd in the video.
Pulse the fresh paneer in a food processor.
In a medium non-stick pan on low heat add the sugar and then add 6-7 tablespoons of milk . Once sugar melts add the crumbled paneer with other ingredients.
The mixture will become gooey in a while, keep on pressing and stirring with the spatula.
After few minutes the mixture will get crumbly again, leaving its sides.
Turn off the stove and let the mixture cool down.
Pulse several times the mixture in a food processor to make it little smoother.
Wet your palms and make equal portions of balls and press the center. Garnish the center with grated almonds and refrigerate the sandesh for 30 minutes to an hour. Serve chilled.
