Chili sauce

Two commonly available varieties of chili sauce in the market are shown here with most simplest methods.


Makes around 1-1/2 cups of each kind
Ingredients :
12-15 spicy hot dry chilies
Ingredients for sauce 1:
1/4 cup sugar
1-2 teaspoons salt
a pinch of asafetida
few pinches of white pepper powder
1 tablespoon lemon juice
1/2 tablespoon corn starch
Ingredients for sauce 2:
2 tablespoons tomato ketchup
1-1/2 teaspoons salt
1 teaspoon black pepper powder
1/2 tablespoon corn starch

Process : In a pot take 3 cups of water, add the red chilies, cover with a lid and bring to a boil, let the water change color little . Turn off the stove , let the mixture cool down and blend coarsely the chilies with some of the boiled water. Mix the mixture with the remaining water and in a saucepan add half part of the blended mixture. Add sugar, salt, white pepper and cook little bit. Then add little water to the cornstarch and pour in the saucepan mixture. Cook for few minutes , add the lemon juice and turn off the stove. Empty in a jar and keep aside to cool down.
In the saucepan again add the remaining part of the mixture, add salt, ketchup, black pepper powder and bring to a boil. Add the corn starch mixture again bring to a boil. Reduce the heat to low and cook for few minutes. Turn off the stove and empty in a jar.
Cool down and then refrigerate.
