Vegan Banana Bread

One of the most desired and loved dessert recipes which I love making. I go one extra mile to fill it with richer ingredients which certainly helps to enhance its flavor. It can be also called a Vegan Banana Cake because of its decadent flavor.


Around 9inches Bread
Ingredients:
2 cups all purpose flour
1/2 cup vegetable/sunflower oil
3 medium ripe bananas
1 cup sugar
1 tablespoon egg replacer (optional)
1 teaspoon vanilla extract
a pinch of salt
1-1/2 teaspoons baking powder
1 cup mix raisins and dry cranberries
1 cup carob chips
1 cup broken dry fruits (cashews, almonds, walnuts)
For Baking :
Parchment paper
Bread shape tray or oven

Process: In a mixing bowl , add first sugar and whisk it well with the oil. Add peeled bananas, vanilla extract, pinch of salt, egg replacer mixed with 3tbsps of water and whisk all smooth.
Add the flour and baking powder and blend into smooth batter so that no lumps exists. Fold the remaining ingredients in the batter evenly.

Preheat the oven on 350F. In a Bread tray, place a parchment paper and pour the batter in it. Gently tap the tray to even out the surface and place the tray in the oven for around 50 minutes. After 50 minutes turn off the stove and let the bread sit in the oven for 10 minutes. You will easily see the bread is cooked. Remove the bread out from the oven and let it cool down completely for nearly 30 minutes near a cool place. You may remove the bread out from the tray and keep the parchment paper on so that the bread cools faster.
After 30 minutes remove the parchment paper and gently cut slice the bread from the flatter side. Serve it with a cup of milk.
