Tomato Tofu curry

Another version of tofu in tomato and curry spices. The aroma is appetizing and surprises you with lots of wonderful flavors.

Serves 4-6
8 boiled and peeled tomatoes
1 tablespoon curry powder
A block of firm Tofu
2 teaspoon cumin seeds
1 cup green peas
1/2 cup parboiled potatoes
1/4 cup chopped carrots
1/4 cup green beans
1/4 cup corn kernels
8-10 cauliflower florets
2 teaspoons salt
3 teaspoons sugar
1 teaspoon red chili powder
1/4 cup chopped cilantro
2 tablespoon oil

Process: Cut the tofu into cubes and roast on a non-stick pan or grease with little oil and fry till golden brown.
Blend all the tomatoes into a smooth puree.
Heat oil in a medium cooking pot. Add the cumin seeds, cauliflower florets and potatoes. Cook on low heat with lid covered for 5 minutes. Add the remaining vegetables with 1/4 cup of water. Cook Again on low heat with lid covered.
Add the tomato puree, remaining spices and bring it to a boil. Add 1/2 cup water,reduce the heat to medium and cook for another 5-10 minutes. Add tofu and simmer for 5 minutes. Turn off the stove, garnish with cilantro.
