Thai Rice Noodles

The fragrance of ginger, different vegetables and the freshness of lime leaves will remind you the simple cooking of Thailand. Get ready to try this simple yet exotic looking rice noodles.

Serves 4
3 cups shredded(carrots, bell pepper, cabbage)
4 cups of boiled rice noodles
1 cup of broccoli florets
4-5 crushed or fresh lime leaves
1/4 cup coconut milk or regular milk
1 tablespoon grated ginger
2 teaspoons salt
2 chopped green chilies
2 tablespoons oil

Process: Boil the rice noodles till they are soft. Transfer them in a cold water bowl.
Heat the oil in a non-stick pan.Add the green chilies and ginger and saute them for 30 seconds. Add the broccoli, cook for 2 minutes by occasionally stirring them.
Add all the other shredded veggies, stir fry on high heat. Add the milk,noodles,salt and lime leaves. Cover with a lid for 5 minutes and let it cook on slow heat. It’s ready to serve.
