Tapioca Potato Clear soup

Soaked tapioca granules combined together with boiled potatoes and few selective spices gives rise to this delicious clear soup.

Serves 4
Ingredients
1 medium boiled potato
½ cup of tapioca granules (Soaked in water for 30-50 minutes)
½ cup chopped cilantro
1 teaspoon cumin seeds
2 finely chopped green chillies
2-3 curry leaves
2 -3 teaspoons salt
1 tablespoon of lemon juice
½ tablespoon oil
Process: Peel the boiled potatoes and cut them into cubes
shapes. Heat oil in a pot and add the cumin seeds. Saute for few
seconds, add the green chillies and the curry leaves. Add the
Tapioca granules along with 4 cups of water. Add salt and bring
the mixture to a boil. Once it started boiling simmer down the
heat. Add the potatoes, cook for another 2-3 minutes and turn off
the stove. Garnish with fresh cilantro and pour evenly the lemon
juice on top to serve.
