Apple Pie

A traditional dessert recipe made commonly during seasonal festivals. In this recipe, the apples are baked slowly in the sauce covered by top and bottom layer of pie crust.

Ingredients:
DOUGH FOR PIE CRUST
2 cups all-purpose flour
1 teaspoon salt
3/4 cup butter cubes
1/4-1/2 cup cold water
9-inch pie dish
oil for greasing
flour for dusting

PIE FILLING
6 small organic gala apples (peeled, cored &
sliced vertically)
1 cup sugar
1/2 cup butter
2-3 tbsp all purpose flour
1 tbsp cinnamon powder
icing sugar for dressing
1tbsp melted butter

Process for the pie crust: On a clean counter top, put the flour, salt and butter. Pour some cold water and mix it. Cut the mixture with the help of a knife and again add some water. Mix well and knead it into a soft dough.
Sprinkle some flour on the counter and roll the dough in it. Stretch the dough with the help of a rolling pin, fold one time, then stretch again, fold again and stretch again. Repeat 2-3 times to form a rectangle shaped dough.
Wrap it in a parchment paper and store it in the freezer for 30 minutes.

Process for the pie filling: Preheat the oven to 400F.
Melt butter in a heated pot, keeping the heat on medium, add the sugar. Dissolve it well in the butter and then add the flour. Mix well, add the cinnamon powder and cook for another 2-3 minutes. Turn off the stove, let the mixture cool down and blend into a smooth paste.
Remove the dough out, dust some flour and stretch it well. Grease the pie dish and place it upside on the dough. Depending on the depth of your pie dish cut a larger diameter past the edge.

Place the cut portion in the pie dish press the dough into it. Add the apples and pour the sauce evenly.
With the help of the rolling pin stretch the remaining dough and cut parallel lines to make strips. Place them horizontally and vertically in a cross-hatched manner on the top and press it over the edges of the dish connecting it to the base dough.
Bake the pie in the oven for 15 minutes on 400F and then reduce the heat to 350F, baking the dough till it turns golden brown (This will take nearly 40 minutes).

Remove the pie out and brush with some melted butter and sprinkle some icing sugar. And the apple pie is ready.

Tips: While baking the pie, the sauce which contains flour may start rising or bubbling causing it to overflow a bit, so you may use a tray to put the dish on top of it.

Potato Pie

Gluten and dairy free potato pie also called as shepherd’s pie with red kidney  beans, simple herbs and sauces make a good healthy meal.

Ingredients :
2 big size potatoes
2 cups of boiled red kidney beans
1/2 cup boiled corn kernels
2 teaspoon dry oregano
1 strip of thyme leaves
1 tablespoon ginger
1 tablespoon paprika powder
1 teaspoon red chilli powder
1/2 cup chopped celery
1 chopped tomato
1/4 cup chopped carrots
1 cup chopped cilantro
1 tablespoon dark soy sauce
2 tablespoon tomato ketchup
2 teaspoon salt
2 teaspoon sugar
1 teaspoon black pepper
1 tablespoon coconut oil
2 tablespoon of regular oil
1/4 cup almond or cashew milk or Soy milk

Process: Boil the Potatoes and keep aside for cooling. Meanwhile add regular oil, once hot add the ginger, carrots, celery and cook it for 5 minutes till they are soft on medium heat. Add the tomatoes, herbs, spices and sauces. Add the boiled red kidney beans, corn kernels, cover with a lid and cook on medium heat for 4-5 minutes.
Mash slightly the entire cooked mixture, garnish with cilantro and mix well.

Preheat your oven on 375F.
Take a big bowl, mix the cashew or almond milk with potatoes, add little salt and mix well till the mashed potatoes are smooth enough to spread.

Take a pie dish, Add the cooled mixture and level it on the dish. Now spread evenly the potato mixture on top. Sprinkle some crushed black pepper and brush with some coconut oil. Make slight triangle divisions on the pie and bake it for 20-25 minutes.
Once the color turns golden brown the pie is ready to be served.
Goes well with Tomato soup

Ekadashi cheese potato pie

After leaving India I learnt about baking. This was one of the very first things I made and it turned out great. This is a delicious dish with simple spices and vegetables.

Ingredients:
2 big boiled potatoes
200 grams grated cheese
1 teaspoon crushed black pepper
1 teaspoon salt
½ cup thick yogurt
2 cups chopped cilantro
1 cup shredded zucchini
1/2 cup shredded carrots
¼ cup shredded cabbage

Process: Mix all ingredients well except cheese. Grease a pie plate with some butter or ghee or oil. Bake in a preheated oven at 375 F for 10 minutes. Remove the plate out and add the grated cheese on top. Bake for another 5 minutes on same temperature and then broil it for 1 minute till the cheese turns golden brown.

Vegetable Pie

The richness and fullness of vegetables, curry spices and tofu is a surprise package covered with crispy flaky dough.

Ingredients:
Filling inside:
½ cup crushed soft tofu
1cup chopped spinach
1 teaspoon chopped ginger
1 cup finely chopped: carrots, cauliflower,broccoli,celery or cabbage,
1 cup green peas
2 cups chopped tomatoes
1 teaspoon curry powder
½ teaspoon chilli powder
1 teaspoon garam masala (if not available then refer homemade spices section)
1 ½ teaspoon salt
1 teaspoon sugar
2 teaspoon ketchup
1 chopped green chilli
1 cup chopped cilantro (green coriander leaves)
Butter or oil for greasing
1 tablespoon oil for cooking

Vegetable Pie inside

For pie cover:
2 cups of wheat or all-purpose flour kneaded into a soft dough with little salt, 1 ½ tablespoon of apple cider vinegar, a pinch of baking powder and 1/4 cup of warm water. Roll them into thin chapatti on a rolling board. Keep aside.

Process: Heat the oil, sauté the ginger and chilli. Add all the vegetables, spices and cook them while stirring for 2-3 minutes on medium heat. Cover the lid and cook for 1 minute. Add the tofu and stir again for a minute. If it’s wet, cook it well while stirring so that excess water is dried out. Add cilantro. Keep it aside for cooling.
Grease a pie dish with oil and place one chapati covering the entire dish. Then fill with the above mixture, making sure to level them properly. Cover the top with another layer of chapatti dough and close the ends properly.
Use the knife and poke the pie in the center. Grease the top with some butter or oil and bake it on 375F for 20 minutes.
