Spinach Pesto
1 min readA combination of Spinach, Tomato and cheese makes this simply delicious healthy pesto. This pesto goes well with spaghetti or pasta.
Serves 2
Ingredients:
250 grams of spaghetti (cooked and kept aside)
5 cups of spinach
1 medium sized tomato cut in 4 parts
1 inch ginger
1 tablespoon olive oil
¼ cup cheese or vegetarian Parmesan cheese
10 raw cashews
2 teaspoons chilli flakes
7 leaves of sweet basil
1 tablespoon of chopped dill
2-3 teaspoons salt
¼ teaspoon black pepper powder
some shredded dry nuts to garnish on top
Process: In a food processor add all the ingredients except the dry fruits for
garnish. Add ¼ cup of water and pulse the ingredients in the processor 2-3
times.
Mix the pesto with spaghetti well and garnish shredded dry nuts.
Serve it well.
Note: You can even use some cherry tomatoes and olives to mix with the
spaghetti and then add the pesto in it.
