This delicious mildly sweet and soft Pumpkin bread will become one of your favorites. Try this interesting yet exciting recipe which is loved by everyone and can easily decorate your kitchen for any festive or party event.
6 cups of Sliced raw pumpkin
3 cups all purpose flour
2.5 cups wheat flour
1 tablespoon instant yeast
4 cups brown sugar
2 tablespoons egg replacer or 2 tablespoons flax seed powder
a pinch of salt
3 tablespoons pumpkin spice powder
1 teaspoon orange food color
2 tablespoons olive oil
1 cup almond milk
little oil for greasing
Flour for dusting
For dressing the Bread:
Mixed broken nuts
2-3 tablespoons raw honey/ maple syrup
1 tablespoon black sesame seeds
Process: Add the sliced pumpkins in the steamer. Once steamed removed it in a big bowl. Mash it well. In a bowl take milk and add the egg replacer or flax seed powder , oil and whisk well. Add to the mashed pumpkin, Use a hand blender and blend it smooth. Add the yeast , pumpkin spice powder, sugar and salt, whisk it smooth. If you are using regular sugar then no need to use food color otherwise add it now. Mix well and empty half of the puree in a bowl. With one half of the puree add the all purpose flour and with another half add the whole wheat flour. Use a spatula and mix the puree well with the flour .
The dough will be wet and sticky. Cover the bowls with surround wrap and keep it under light or warm place for 1.5 hours. until the dough rises. Once dough rises for more than double size then remove the plastic wrap. Remove the dough on the plastic mat with a small spatula. Don’t press or bind the dough and be gentle with it. Grease the palms with some oil, dust little bit flour on the dough, divide the dough in equal portions. Gently with the palms at the bottom of each dough ball, shape the dough round. Place the dough balls on a non stick round pan. Cover again with a surround wrap and let the dough rise for another 30 minutes. By this time preheat the oven on 350F.
Once the dough rises more remove the wrap and bake buns made from both the flours for around 15-20 minutes.
The top surface will turn golden brown , remove the pan out and brush some honey all over the bread, sprinkle some broken nuts and sesame seeds. Let the bread cool down at room temperature naturally without using fan or keeping window open. Delicious Pumpkin Bread is ready to serve with some milk.
