Meatless Eggplant sabji

This is a good start for those who are trying to become vegetarians. A good surprise bowl with paneer, eggplant and other simple spices and superior to meat.


3 small eggplants
1 ½ teaspoon of cumin seeds
1 medium potato cut in cube sizes
1 cup of cubed paneer
1 cup of whey(the leftover liquid from yogurt after straining it)
5-6 curry leaves
2 tablespoon brown sugar
1 teaspoon of red chilli flakes
½ cup chopped cilantro
1 ½ teaspoon of salt
Oil for cooking

Process: Soak the eggplant in cold water with 1 teaspoon of salt for 15 minutes and the drain out the water.

Heat the non stick pan on medium temperature. Add some ghee or oil to it. Put first paneer cubes and fry them till they are golden brown on both the sides. Put them on a tissue paper to get rid of excess oil. Do the same with potatoes and in the end with eggplant.

Heat 1 tablespoon of oil in a medium sauce pan. Add the cumin seeds, curry leaves and add the whey to it with sugar. Bring it to a boil. Add all the vegetables fried before along with salt, chilli flakes and reduce the heat to low. Cover with a lid and cook for another 4-5 minutes. Till all the whey is soaked by the vegetables. Turn of the stove and garnish with cilantro. Accompanied well with potato cheese sandwich.
