A very basic recipe on to how to make Spring roll sheet at home with simple ingredients along with its vegetarian filling.
Makes 19- 20 sheets
2.5 cups of all purpose flour
2 teaspoons salt
1 cup water
flour for dusting
oil for brushing
Process for the sheets : Take the flour in a bowl and mix the salt with it. Add gradually 1 cup of cold water and knead into soft dough. Do not add too much water. After the dough is formed , cover with a surround wrap and keep aside to rest for 30 minutes or until the filling is prepared.
Once the filling is cooling down, remove the dough and divide it into equal portions of balls. Roll each dough ball with the help your palms.
Take five dough balls at a time , dust some flour on each and stretch it into 2 inches flat circles with the help of the rolling pin.
Now take 1 flat circle and brush some oil all over it, then dust some flour on top too. Then place another flat circle on top, repeating the same step until 5 layers are placed. On the last layer just dust flour and then stretch all of them together around 9 inches in diameter.
Keep the pan on low heat , and then place the sheet on it (one batch at a time) . Now putting the heat on medium cook each side for 10-20 seconds just enough to see bubbles.
Let the cooked sheets/ wrappers cool down under fan just for 2 minutes. Start separating the sheets gently while they are bit warm. Use them to make the rolls.
Ingredients for the filling :
1 tablespoon sesame oil
1 tablespoon chopped ginger
1/2 teaspoon of asafetida
3 cups shredded carrots
3 cups shredded cabbage
1 cup diagonal cut green beans (phansi)
1 tablespoon light soy sauce
1 teaspoon red chilli powder
1 teaspoon chinese 5 spice powder
1 teaspoon black pepper powder
1 teaspoon chilli paste
1 teaspoon lemon juice
2 tablespoons vital wheat gluten
1/2 cup chopped cilantro/coriander leaves
Oil for frying the rolls
Process for the filling : Add oil in a saucepan or skillet, once hot then add the ginger, asafetida and saute for few seconds.
Add the carrots , beans and cabbage along with powder spices and seasonings together. After cooking for 2 minutes add the vital wheat gluten and mix things well cooking for another 3 minutes. Cook everything on medium heat.
Turn off the stove and garnish with fresh cilantro mixing everything well. Keep aside to cool down.
Note : I made the chilli paste by soaking few dry chillies in warm water for sometime and then using some of that water blending into a thick paste. Added few drops of lemon juice and then stored in the refrigerator.
Process for making the rolls : Place one sheet/wrapper on the counter top and at one end of the surface add 2 tbsps of the filling.
Use some water to apply on the top, bottom and rear part of the sheet. First close the top part, then the adjacent one and then the bottom part. Apply some more water and tightly roll the sheet bringing it together until the end.
Make sure to apply water properly at the end to close the sheets well.
By the time sheets are rolled, put some oil on medium heat. Once all the sheets are filled and rolled, check if the oil is hot but dropping a small piece of dough in it . If it comes up on the surface right away then its ready to fry the spring rolls.
Fry 4-5 batches of the spring rolls at a time until they turn golden brown overall and place them on a plate covered by an absorbent paper. Your homemade crispy spring roll sheets are ready to serve hot!
