How to make Couscous Salad
2 min readThis healthy salad made from couscous is rich in protein and has many health benefits . A perfect ingredient to keep your stomach full for a long time and maintain healthy weight.
Serves 4
Ingredients:
1 small Acorn Squash (Bhopla or Kaddu)
1- 1/2 cups couscous
1 teaspoon himalayan rock salt
1 cup chopped seedless tomatoes
1 cup chopped colored bell peppers
2 cups chopped cucumber
2 avocados cube cut
1 teaspoon chilli flakes
1 cup chopped cilantro
1 teaspoon black pepper powder
1/2 cup dark raisins
2 teaspoons lemon juice
Process: Cut the top part of the acorn squash and remove the seeds out. Pressure cook for 1 whistle using around 4 cups of water. As soon as the pressure cooker whistles once remove the cooker off from the stove and put under a fan.
By that time take 1-3/4 cups of water in a skillet and add salt to it. Once water starts boiling add the couscous and turn off the stove. Cover with a lid and let it cook in the hot water for 5 to 7 minutes.
Peel and cut the cooked squash in cube sizes and keep aside. Take a bowl and add one by one all the ingredients and mix well. Add the couscous in parts and mix again. Add the lemon juice and then raisins in the end.
Cover the bowl with a surround wrap and keep in the fridge for 30 minutes. Serve chilled on a plate.
