Healthy Burritos

Here is my version of Healthy Burritos which is made with 2 kinds of homemade Tortilla wraps.

Ingredients for wraps:
1. 2 cups whole wheat flour/durum wheat flour
1 teaspoon salt
2-3 tablespoons olive oil
Flour for dusting

2. 1 – 1/2 cups wheat flour
3/4 cup teff flour
1- 1/2 teaspoons salt
2 tablespoons olive oil
Flour for dusting

Filling Mixture :
5 Boiled Potatoes
1 ripe avocado
1 cup mixed beans (kidney beans, black eyed peas etc)
1 teaspoon chilli flakes
1/2 teaspoon extra spicy dry crushed chillies
2 teaspoons salt
1 teaspoon black pepper powder
1/2 teaspoon hing(asafetida)
1/2 teaspoon turmeric powder
1 teaspoon garam masala powder
1/2 cup chopped dill
1 cup chopped parsley (optional)
1 cup chopped cilantro

Avocado sauce :
1 ripe avocado
3 tablespoons sour cream
black pepper powder(optional)

Topping vegetables:
Romaine Lettuce leaves for wrapping
Julienne cut bell peppers, tomatoes and cucumbers

Process for the doughs : Take a medium bowl, add the ingredients and mix them together. Gradually add water and knead into a soft dough.
Knead both the doughs with same process.
Keep them aside to rest for 30 minutes, keeping them covered with a lid or cloth.

Mix and mash gently all the filling ingredients together . Keep it aside
For the sauce blend the sour cream and avocado together with little water, keeping in mind not to add too much water. The consistency of the sauce needed is thicker.

Process for making Burritos : divide the dough into equal balls. Take one ball and dust some flour, roll the dough around 10 inches diameter long.
Place the rolled dough on a heated pan and cook each side for 30 seconds each on medium heat.

Remove the cooked tortilla and on one corner place one lettuce leaf. Add the filling mixture, the avocado sauce, add the fresh veggies on top. Close the tortilla from one end vertically, and then close from top and bottom.
Close and roll them tightly. Either you may bake these wraps on 350F for 5 minutes on preheated oven or you can cook them on a pan with medium heat. Make sure to cook all the sides.
Serve Hot
