Grain free Paneer Sabji

This simple sabji of paneer is made with mild proportions of spices. A very good option for grain free fasting day of Ekadashi.

Serves 4

2 cups of stir fried Paneer
1 cup chopped tomatoes
1 chopped green chilli
1 teaspoon cumin seeds
2 cups of finely chopped celery or cabbage
1 cup chopped cilantro
2 teaspoons salt
1 teaspoon sugar
½ cup of yogurt
½ teaspoon chopped ginger
¼ cup cauliflower florets (optional)
½ chopped bell pepper
2 tablespoons oil

Process for Sabji: Heat 1 tbsp oil in a medium saucepan and sauté green chillies, ginger and cumin seeds for 30 seconds. Add the celery and fry till golden brown. Add the tomatoes and cook for a while till the water is dried. Empty everything in the blender, add yogurt and blend it to a smooth paste. Use the same saucepan by adding some oil and stir fry the cauliflower florets. Add the paste and cook well with the cauliflower till it gets little dry. Add two cups of water, salt and sugar and bring it to a boil.
Add the paneer and cook for 3 minutes on medium heat. Turn off the stove garnish with cilantro and chopped bell pepper.
