Fried Rice

This was the very first thing I learnt to cook with the leftover rice and its very delicious just like chinese fried rice. You can either do it with leftover rice or you can cook fresh rice and then stir fry it.

1 cup of Rice cooked 2 hours prior
1 cups shredded cabbage
2 tablespoon oil
1 teaspoon mustard seeds
1 teaspoom cumin seeds
1 teaspoon fennel seeds
4 curry leaves
2 green chilies
1 ½ teaspoon salt
1 teaspooon lemon juice
1 teaspoon sugar
1 cup chopped cilantro

Heat the oil in a broad non stick pan, add mustard seeds. Once they splutter, curry leaves, green chilies, fennel seeds and cumin seeds. Saute it on a medium heat for a minute.
Add the cabbage and turmeric and saute it for 2 minutes.
Add the rice, mix well and cook for another 3 minutes on medium heat.Turn off the stove and add the lemon juice,garnish with cilantro.
