EKADASHI TAPIOCA CHEESE BUNS
1 min readThese Buns are simple to make and tastes very delicious. A perfect grain free bun!!Makes 6-8 balls
Ingredient for the buns:
¾ cup coconut milk
1- ½ tablespoon butter
2 cups tapioca flour/starch
½ teaspoon salt
1 cup grated cheese
1 teaspoon chilli flakes
Process for buns:
In a small saucepan heat the milk and butter until the butter melts. While the milk and butter are warming, combine the tapioca flour and salt in a bowl. Allow the milk to cool a bit and then add to the tapioca starch. A strange textured dough should form that will not hold its shape. Once this dough is lukewarm, add the cheese and chilli flakes, mix well. Take equal portion like 1 ½ inch portions and roll them into oval balls. Place them 1 inch apart on the greased cookie sheets. Brush some milk on the top of the balls and bake for 20 minutes on 375F.
Note: Make sure not to add too much milk, add it gradually and keep kneading to have the dough round.
