Ekadashi Mango Ice-cream
1 min readAn ice-cream made perfect with the use of only 3 ingredients
Ingredients:
5 sweet Ataulfa or Alphanso mangoes or Kesar mangoes
200 ml condensed milk
1-1/2 cups whipping cream
Process: Remove pulp of 4 mangoes, blend it until smooth. Take a big bowl, add the cream and condensed milk. Whisk it until the cream thickens (Firmness should be little lesser than cake icing). leave around 1/2 cup of the pulp for the dressing. Add the blended mango pulp in batches in the cream. Fold the cream and mangoes with the help of a spatula. Add mango chunks from one mango and gently mix in with the cream.
Take a round baking pan and pour the cream in it. cover the pan with a surround wrap , making sure to smooth the wrap on the surface in order to prevent ice crystals forming in empty gaps. Freeze for 3-4 hours.
Remove out, scoop in a bowl to serve.
