Ekadashi cheese potato pie

After leaving India I learnt about baking. This was one of the very first things I made and it turned out great. This is a delicious dish with simple spices and vegetables.

2 big boiled potatoes
200 grams grated cheese
1 teaspoon crushed black pepper
1 teaspoon salt
½ cup thick yogurt
2 cups chopped cilantro
1 cup shredded zucchini
1/2 cup shredded carrots
¼ cup shredded cabbage

Process: Mix all ingredients well except cheese. Grease a pie plate with some butter or ghee or oil. Bake in a preheated oven at 375 F for 10 minutes. Remove the plate out and add the grated cheese on top. Bake for another 5 minutes on same temperature and then broil it for 1 minute till the cheese turns golden brown.
