Coconut Curry

Simple and delicious coconut curry. The richness of coconut gives satisfaction to your belly and heart. Serve it with hot white rice.

2 cups coconut milk
1 teaspoon of cumin seeds
1 teaspoon red chilli flakes
1 teaspoon curry powder
½ teaspoon of ginger paste
1 cup sprouts
2 cups of thinly sliced celery or cabbage
1 cup of thinly sliced bell pepper
1 ½ teaspoon of salt
½ teaspoon of sugar
1 ½ cup of water
1 teaspoon of oil
½ cup of cilantro

Process: Heat oil in a medium saucepan. Add cumin seeds, ginger paste and sauté it for few seconds. Add the celery or cabbage, sprouts, red chilli flakes and cook till the cabbage or celery becomes soft. Add the bell pepper, curry powder. Sauté for a minute and then add the coconut milk, salt and sugar. Bring it to boil.
Add now water and bring it to a boil again. Simmer for another 5 minutes. Turn off the stove and garnish with cilantro.
