Chinese Fried Rice

Chinese fried rice is a most liked fast food of India. Its fresh and tasty with vegetables and spices.

2 cups cooked Rice
2 sticks of finely chopped celery
1/2 cup finely chopped carrots
1/4 cup Julienne slice cabbage
1/2 cup finely chopped red bell pepper
2 finely chopped green chilli
2 teaspoon of finely chopped ginger
1 teaspoon of soya sauce
few drops of rice vinegar or apple cider vinegar
2 teaspoon of salt
1/4 cup oil
1/4 cup of finely chopped cilantro

Process: The cooked rice should be nice and dry without water contents. Best is to cook it 2-3 hours before stir frying it.
Heat oil add the ginger and green chilli. Saute it for 30 seconds then add all the vegetables, stir fry for 2 minutes on high heat.Add spices, sauce and vinegar.
Reduce the heat to medium and add gradually the rice by constantly stirring it. Stir fry it for 2-3 minutes and turn off the stove. garnish with cilantro.
