Chinese Chopsuey

This cuisine consists of various vegetables cooked in a thick sauce. The vegetables, tofu or paneer are battered well with corn starch, made crispy and then mixed to cook with the sauce. Many of them use noodles in it but I like to keep this recipe exclusively with vegetables.

Serves 4
Ingredients:
1 big potato French fries cut (4 inches each slice)
200 grams of firm tofu or paneer cut in cube shapes
10 cauliflower florets
2 bell peppers cut in cubes (2inches)
1 tablespoon chopped ginger
2 teaspoons red chilli flakes
½  tablespoon dark soya sauce
2 tablespoon corn starch for sauce
2 teaspoons lemon juice (optional)
1-2 cups corn starch or rice starch for coating vegetables
2 tablespoons oil
Oil for deep frying
¼ cup ketchup
2 tablespoons sugar
3 teaspoons salt
¼ cup finely chopped cilantro

Process: Heat oil in a wok. Make a thick batter using 1- ½ teaspoons of salt in the starch for coating the vegetables. Dip each vegetable and paneer or tofu in the batter and fry them until they turn golden brown. Do this in batches to avoid vegetables sticking to each other. 

Remove them on an absorbent paper. Heat oil in a non-stick sauce pan. Add the ginger, sauté for few seconds. Add soya sauce, ketchup, remaining salt and sugar. Mix well and then add 2-3 cups of water. Bring it to a boil and once it starts boiling reduce the heat. Mix the 2 tbsps of corn starch with some water and add to this mixture. Again bring it to a boil. Reduce the heat little and add in the battered fried vegetables. Mix well and turn off the stove. Add chilli flakes and garnish with cilantro.

Note: Coating bell peppers and frying them is optional , you can use them directly in the sauce
