This Pulao has traditional spices of South India . Not just good flavor of spice and crunchiness of cabbage but it has a tempting aroma too which increases your appetite.
1 cup of Basmati Rice 1 hour prior
2 cups shredded cabbage
2 tablespoon oil
1 teaspoon mustard seeds
1 teaspoon urad dal (split black lentil)
4 curry leaves
2 dry kashmiri chilli
1/4 cup chopped celery
1/4 cup split bengal gram/Chana dal(par boiled)
1 ½ teaspoon salt
1 teaspooon lemon juice
1 teaspoon sugar
1 cup chopped cilantro
1/4 cup of grated coconut

Heat the oil in a broad non stick pan, add mustard seeds. Once they splutter, add urad dal, curry leaves, red chilli, and saute on a medium heat for a minute.
Add the celery and turmeric powder, saute for another minute.
Add the cabbage, chana dal, salt and one tablespoon of water, mix well and cook on a slow heat for 3 minutes while stirring occasionally.
Add the rice, mix well and cook for another 3 minutes on medium heat.Turn off the stove and add the lemon juice,garnish with cilantro.
