BLACK EYED PEAS SPINACH CURRY COOKED IN COCONUT MILK
1 min readCall it a sabji to be eaten with chapati or a nice curry soup, this is one of the quick,simple,healthy and warm way to feel happy and light. The fun part is, you don’t have to do much but yet get such rich flavor which is pleasing to the heart. The color of spinach and curry gives a boost to the appetite.
Serves 2
Ingredients:
2 cups boiled black eyed peas
2-3 curry leaves (optional)
2 tbsp grated ginger
1 teaspoon cumin seeds
1 big tomato chopped
1 tablespoon curry powder
1 cup coconut milk
3 cups of chopped spinach
1 tablespoon coriander powder
½ tablespoon salt
½ tablespoon sugar
2 tablespoons coconut oil
Process: Heat oil in a pot. Sauté curry leaves and cumin seeds, add ginger paste and chopped tomato. Cook on medium heat until tomatoes. Add curry, coriander powder, mix with the tomatoes well, cover with a lid and let the tomatoes soften (sprinkle some water if needed). Remove the lid, add salt, sugar and the peas.
Add coconut milk, one cup of water and bring it to a boil. Reduce the heat between low to medium, add spinach and simmer for another 5 minutes. Serve Hot with rice.
