Bharwa Bhindi
1 min readOkra filled with coconut and rich spices which makes a perfect recipe of finger food.
Ingredients:
300 grams okra/bhindi
1 cup desiccated coconut
1 teaspoon red chili powder
2 teaspoon coarsely ground fennel seeds
1 teaspoon coriander cumin seed powder
1/2 teaspoon garam masala
1 teaspoon turmeric powder
1 tablespoon lemon juice
1-1/2 teaspoons salt
few tablespoons of oil
chopped cilantro to garnish
Process: Cut both the ends of the washed and pat dried okra. Slit from the center all of them. Add and mix one by one the dry spices in a bowl with the coconut . Add salt and lemon juice , mix well again. Sprinkle some drops of water and again mix well to get somewhat moist mixture. Stuff this mixture in the okra.
Add a tbsp of oil in a non stick saucepan, keeping heat on medium place the okras one by one. Reduce the heat to low and cover the pan. Cook on low heat the okra base for around 7 minutes. You can drizzle more oil if needed, once the bottom side is cooked then turn the okra and cook the top part in similar manner.
Once okras are done, then turn off the stove, garnish with fresh chopped cilantro and serve them hot.
