Simple spinach potato sabji made with easily available ingredients
Ingredients :
10 cups chopped spinach
6 small potatoes chopped
1 tablespoon oil
2 teaspoons of cumin seeds
1 teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon garam masala powder
2 chopped green chilies
few curry leaves
salt as per taste
1/4 teaspoon asafetida
Process : Heat oil in a medium skillet. Add asafetida, green chilies and saute well. Add curry leaves, cumin seeds and saute again.
Add the potatoes , keeping heat on medium add the powdered spices and mix well. Add 1/4 cup water , mix well, add salt , 1/2 cup water again, cover and cook on low heat until potatoes turn tender.
Add spinach, cover for 2 minutes to let it settle. Then open the lid and mix well. Cover and cook again for 5 minutes only. Do not cook the spinach too much.
Serve hot with chapatis
