Achari aaloo

These are par boiled potatoes cooked in pickle spices, tamarind pulp and tomatoes. Its a perfect festive sabji and even if you are not hungry, the aroma of the sabji will tempt you to try it several times.

3 big potatoes par boiled.
1 teaspoon of tamarind pulp
1 chopped tomato
1 teaspoon of cumin seeds
1 teaspoon mustard seeds
½ teaspoon of red chili powder
2 teaspoon of pickle powder (homemade spices)
1 teaspoon of turmeric powder
2 cups of chopped cilantro
2 teaspoon of salt
2 teaspoon of sugar
2 tablespoon of oil
1 teaspoon of lemon juice

Process: Heat oil in a medium non-stick pan. Add the mustard seeds, let it splutter, add the cumin seeds and tomatoes. Add the red chilli powder, turmeric powder and pickle powder. Add 2 tablespoon of water and cook the spices on low heat with tomatoes.
Add the potatoes, salt and sugar. Mix well and cover the lid. Cook for 5 minutes on low heat. Remove the lid, again stir the potatoes and cook on medium heat. Turn off the stove. Garnish with chopped cilantro and lemon juice.
