Yellow and green moong Beans Handvo

A traditional Gujarati dish made with two kinds of lentils. Its mixed with proper amount of veggies. Cooked in covered pan or oven with an aromatic tempering of different spices gives it an irrestible flavour.

1 cup of yellow moong daal {soaked in hot water for 2 hours)
1 cup of split green moong daal{soaked in hot water for 2 hours)
3 tablespoon of semolina (rava/suji)
1/2 teaspoon carom seeds
1 cup of boiled mixed vegetables like green peas, carrots and French beans
2 teaspoon of ginger chilli paste
2 tablespoon of chickpea (gram) flour
1 cup yogurt
4 teaspoon sugar
3 teaspoon salt
1 teaspoon baking powder

Seasoning:
5-6 curry leaves
1 teaspoon: sesame seeds, mustard seeds
1 chopped green chilli
2 tablespoon of cilantro
2 tablespoon of oil

Moong daal Handvo 1

Process: Blend to a coarse paste both the dal using ½ cup of water. Put the paste with the remaining ingredients in a mixing bowl and mix well.Add water gradually to get between medium to thicker pouring consistency batter. Keep aside for 15 minutes.

Cooking on Pan Option: Heat the oil in a non-stick pan, add the mustard leaves, curry leaves chilli and sesame seeds. After they splutter, pour the batter and spread it evenly. Cover the lid and cook on a medium heat for 10 minutes or till the base turns golden brown in colour. Lift the handvo gently with two flat spoons and flip it, letting the other side cook for another 7 minutes till golden brown.
Once it’s cool down, cut into equal pieces. Garnish with cilantro.

Cooking in Oven Option(Recommended):

Preheat the oven on 400 F. Pour the batter and cook it in the oven for 20 minutes. You can check whether the handvo is ready by poking a knife in it and if it’s still sticky then it needs to be cooked more (If the base has already gone brown then you can reduce the oven heat to 375 F and let it cook for another 10 minutes). Once the entire Handvo is cooked with base Golden brown, then you can broil the top for 2-3 minutes and turn off the oven. Let it cool down, cut into equal parts and garnish with cilantro. For tempering Heat oil in a small sauce pan, add the mustard leaves, curry leaves chilli and sesame seeds. Once they splutter spread them evenly on the handvo.
