Veg lollipop without all purpose flour

One of my most favorite savory which I experiment in many different ways.This lollipop is filled with vegetables and curry spices. Tried not using gluten or wheat flour and still worked great. this goes well with schezwan sauce or avocado dip.

Makes 10 lollipops
Ingredients for “pops”:
1 ½ teaspoons of oil/ghee
¼ cup finely chopped carrots, cabbage, and cauliflower
1 tablespoon of green peas
½ cup grated paneer
1 teaspoon finely chopped ginger
2 medium size boil potato
¼ cup chopped cilantro (green coriander leaves)
2 teaspoon salt
1 teaspoon sugar
1 deseeded finely chopped green chilli
1 teaspoon red chilli powder (if want to avoid spiciness but still want to add colour, use paprika powder or Kashmiri red chilli powder)
1 teaspoon turmeric powder
1 teaspoon Garam masala (if not available refer to homemade spices section)
1 teaspoon coriander powder
1 teaspoon achari (pickle) powder (If you don’t have one refer to my homemade spices section)
3 tablespoons of corn starch
½ cup bread crumbs for rolling

Ingredients for the sticks:
1 cup Tapioca
1 teaspoon oil, sugar.
Little warm milk for kneading

Oil for frying/Oven preheated at 375 F

Process: Add and mix everything in a bowl. Make small round shape “pops”. Keep them aside.
Knead the 1 cup of Tapioca flour into a soft dough with the help of milk. Make cylindrical two inches long sticks and place it on a greased parchment paper.
Frying options: Heat the oil for frying and once the oil is hot reduce It to a medium heat and put 5 sticks at a time and let them half cook like nearly for 2 minutes. Remove them, keep aside and repeat the next batch.
Once sticks are done, roll the pops over the bread crumbs the put “pops” into the stick covering half of the stick. Fry them similar to the sticks for nearly 5-7 minutes on medium heat.

Baking options: Preheat the oven on 375F. Put parchment paper on the tray greased with little oil, Place all sticks and bake them for 5 minutes. Then remove the tray and let the sticks cool down a bit, repeat the same procedure of “pops” with sticks and then bake them at 375F for 15-20 minutes till they are brown in color.
