Stuffed Bhindi

Pan fried okra with stuffed with coconut. Cooked with appetizing spices is a good side dish to eat alongwith rice and dal.

Ingredients:
½ kg okra washed and dried
1 ½ cup of grated coconut
1 tablespoon of lemon juice
1 teaspoon of fennel seeds
1 teaspoon turmeric powder
1 teaspoon red chilli powder
1 teaspoon garam masala (homemade spices section)
1 teaspoon salt
½ teaspoon cumin seeds
½ teaspoon sugar
1 teaspoon coriander powder
½ cup finely chopped cilantro
Oil for pan frying

Process: In a medium saucepan add 1 tablespoon of oil, add cumin and fennel seeds. Once they crackle add the grated coconut and all the other spices. And cook till the coconut turns little golden.
Add the cilantro and lemon juice. Mix well and keep aside for cooling.

Cut the head of the okra and slit from middle and try removing gently the seeds as much as you can. Don’t overdo it, in order to avoid the breaking into two parts. Fill the mixture inside the okra one by one.
Heat a non-stick pan add around one tablespoon of oil. Spread it on the entire pan and keep the 5-6 okra at a time and reduce the heat to low. Cover with a lid and cook for 2-3 minutes. Increase the heat to medium and Fry the base for 3 minutes. Turn the okra towards the sides gently, letting it cook for another 2 minutes. Turn the open side of the okra at the base and cooking for two more minutes. Okra ready, Serve with Hot rice and Dal.
