Dosa is fermented from rice batter and black lentils. It is a staple dish in South Indian states. Generally, it is made by soaking rice and lentils together overnight and then blending it to form a smooth paste. This recipe I tried directly using the flours and it still turn out great.
Ingredients for dosa:
1 cup rice flour
1/2 cup black lentil (urad) flour
1/2 cup yogurt
1 teaspoon salt
1/2 tablespoon lemon juice
1 teaspoon baking powder alongwith 1 packet of eno or 2 teaspoons of baking powder
1 tablespoon sugar
1/2 teaspoon fenugreek seeds(soaked for 15 minutes)
3 medium potatoes (par boiled)cut in cubes
1 cup chopped tomatoes
1 teaspoon mustard seeds
1 teaspoon cumin seeds
3-4 curry leaves
1 teaspoon split white lentil (Urad dal)
1 teaspoon turmeric powder
1 teaspoon red chilli powder
1 green chilli finely chopped
1 teaspoon dry mango powder
1 teaspoon sugar
2 teaspoons salt
1/4 cup cilantro finely chopped
1/4 cup oil

Process for fermentation of dosa: Blend the soaked fenugreek seeds in 1 tablespoon of water. Mix it with all the ingredients of dosa except the baking powder, salt and eno.
Whisk well by gradually adding little water to it. The dosa batter should be between medium to thick consistency, easy to pour and spread. Keep aside for 2 hours covered with a lid in a warm place.
For the filling: Heat oil in a medium saucepan. Add the mustard seeds. After they splutter, add the cumin seeds, curry leaves, green chillies, lentil and saute for 30 seconds. Add the potatoes and spices, cover with a lid and cook it on low heat for 5 minutes. Occasionally stir the potatoes so that the spices mix well.
Add the tomatoes and cover the lid again. Cook for 3 minutes on medium heat. Remove the lid, increase the heat and constantly stir everything well for a minute or two.
Garnish with cilantro.
Making the Masala Dosas: After two hours, add the eno and baking powder with tablespoon of water to the batter and whisk well.
Heat a nonstick pan, grease entirely with little oil. Maintain the heat between low-medium. Before pouring the batter make sure to turn the heat on low.
Take a 1/4 measuring cup batter and pour it on the pan, gently spreading it with the base of a wet spoon.
Sprinkle some water on top and let it cook till the base turns golden. Flip it to the other side and cook till it shows little golden marks but is still white. Flip it again to the initial golden base.
Take a tablespoon of the filling mixture put it on the middle portion of the dosa, spread a bit.Increase the heat to medium and cook till it turns light brown. Then close it with the help of a spatula. Cook for another 30-60 seconds and remove it from the pan. Repeat the same for all. They are ready to serve.
