Cup Pizza

Version of pizza in cup. Crispy from outside and cheesy crunchy from inside.

Ingredients for dough:

1 cup of all-purpose flour
1.5 tablespoon of yeast
2 tablespoon of oil
1 teaspoon of salt
1.5 tablespoon sugar

Fillings:
1 cup of pineapple titbits
1 cup of chopped cilantro
½ cup finely chopped paneer
½ cup chopped bell pepper
1 cup chopped celery
1 cup chopped Zucchini
1/2 cup chopped cucumber
2 tablespoon of chopped ginger
1 teaspoon crushed oregano
1 cup chopped tomatoes
1 cup Tomato ketchup
2.5 cup grated cheese

Process: Mix little flour,  yeast, 1/4 cup warm water, oil, salt and sugar and keep it aside for 5 minutes. Add the remaining flour and other ingredients and knead it with warm water. Cover it with a wet cloth and keep it aside for 30 minutes till the dough doubles up.

Take a medium size cup, wrap aluminium foil surrounding the outside surface of the cup and closing the ends from inside. Grease the surface of aluminium foil with little oil and cover it in with a portion of dough, same shape of the cup.

Place it in a preheated oven at 375 F for 5-10 minutes.

Remove it out and let it cool down. Gently pull out the cooked dough from the cup.

Mix all  the toppings in a bowl , sprinkle some salt(optional) and crushed dried oregano and ketchup together. Start stuffing the cups with layers of vegetables and cheese.Bake it again on 375 F for 10 minutes till the cheese melts and the colour of the dough becomes little golden brown.
