Apple Pie

A traditional dessert recipe made commonly during seasonal festivals. In this recipe, the apples are baked slowly in the sauce covered by top and bottom layer of pie crust.

Ingredients:
DOUGH FOR PIE CRUST
2 cups all-purpose flour
1 teaspoon salt
3/4 cup butter cubes
1/4-1/2 cup cold water
9-inch pie dish
oil for greasing
flour for dusting

PIE FILLING
6 small organic gala apples (peeled, cored &
sliced vertically)
1 cup sugar
1/2 cup butter
2-3 tbsp all purpose flour
1 tbsp cinnamon powder
icing sugar for dressing
1tbsp melted butter

Process for the pie crust: On a clean counter top, put the flour, salt and butter. Pour some cold water and mix it. Cut the mixture with the help of a knife and again add some water. Mix well and knead it into a soft dough.
Sprinkle some flour on the counter and roll the dough in it. Stretch the dough with the help of a rolling pin, fold one time, then stretch again, fold again and stretch again. Repeat 2-3 times to form a rectangle shaped dough.
Wrap it in a parchment paper and store it in the freezer for 30 minutes.

Process for the pie filling: Preheat the oven to 400F.
Melt butter in a heated pot, keeping the heat on medium, add the sugar. Dissolve it well in the butter and then add the flour. Mix well, add the cinnamon powder and cook for another 2-3 minutes. Turn off the stove, let the mixture cool down and blend into a smooth paste.
Remove the dough out, dust some flour and stretch it well. Grease the pie dish and place it upside on the dough. Depending on the depth of your pie dish cut a larger diameter past the edge.

Place the cut portion in the pie dish press the dough into it. Add the apples and pour the sauce evenly.
With the help of the rolling pin stretch the remaining dough and cut parallel lines to make strips. Place them horizontally and vertically in a cross-hatched manner on the top and press it over the edges of the dish connecting it to the base dough.
Bake the pie in the oven for 15 minutes on 400F and then reduce the heat to 350F, baking the dough till it turns golden brown (This will take nearly 40 minutes).

Remove the pie out and brush with some melted butter and sprinkle some icing sugar. And the apple pie is ready.

Tips: While baking the pie, the sauce which contains flour may start rising or bubbling causing it to overflow a bit, so you may use a tray to put the dish on top of it.

Barbecue Sauce

I am happy to share with you my own homemade barbecue sauce recipe, which is pretty easy and simple. This condiment can be used not just for pizza but also for soya protein meals or marination of Indian cheese of raw jackfruit.

Ingredients:
3 cups of crushed tomatoes or Thick Tomato puree
1/4 cup of dark tamarind Pulp
1/4 cup of Tomato ketchup (Two brands will give you pure veg ketchups- Kissan and No name from Superstore, or use my homemade ketchup-recipe)
2 tablespoon of Indian mango pickles without mango)
1 tablespoon of soy sauce
2 tablespoon sugar
1 tablespoon salt
3 tablespoon of hungarian smoked Paprika powder (this is what gives  smoky flavour to the sauce)
2 teaspoons yellow mustard powder
1 teaspoon of lemon juice

Process: Mix all ingredients properly together and add a cup of water to it. Cover with a lid and cook on low to medium heat the entire mixture till the sauce turns thicker and reduced to half.
Let it cool down and use it or preserve it in an glass  bottle.
Refrigerate it for storage.

Dahi Chida

Panihati is the name of a village located in the state of West Bengal, India on the banks of River Ganges. The festival of Panihati is known as a festival of sweet loving punishment which is exchanged between the Lord and His devotees.

Dahi Chida is the most famous sweet dish prepared in this festival. It is a combination of milk, chipped rice, yogurt and lots of fruits. The recipe has many variations and I like to make this one the most.

Serves 4
Ingredients
2-1/2 cups of Chipped rice (Poha, washed and drain)
1 cup of Sugar
2 cups of milk
2 cups of yogurt
1 cup of freshly prepared thick sweet condensed milk
2-3 teaspoons of cardamom powder

Fruits for flavoring – Mangoes, cherries, apples, bananas and dry fruits. (Use the Fruits which you prefer except oranges and lime) 😀

Process: Heat the milk on low till it rises to the surface. Add the chipped rice, sugar, Cardamom powder, mix well and cover with a lid. Let the chipped rice soak till the entire mixture reaches room temperature.

Beat the yogurt nicely and add to the mixture which has cooled down along with sweet condensed milk. Mix well and then add the fruits and dry fruits.
refrigerate it for 30 minutes to 1 hour and the Dahi Chida is ready to serve 🙂

Note***: (I made fresh condensed milk by letting 2 cups of milk mixed with 1/4 cup yellow sugar, cook on low and occasional stirring. after the color started to turn cream, I mixed 1/4 cup of water with 2 tbsp of cornstarch and added to the milk. Then kept on occasionally stirring it till the milk reduced to half. So if you are using two cups of milk, then the condensed milk should be around 1 to 3/4 cup approx.)

Cherry cheese/cream cake (Raw)

This recipe has been my household favorite. This no bake cake is a simply amazing desert to rely on for your sugar cravings.  I make this cake with two variations one with cream cheese and other with fresh cream plus thick condensed milk.

Makes 8 slices
Ingredients
2 cups cherry pie filling/cherry Jam
3-4 cups of graham crackers powder
4 tablespoons honey or maple syrup
1/4 cup coconut sugar
1 cup sweet thick condensed milk + 1 cup fresh thick cream or 2 cups of cream cheese + 1/4 cup honey (any other sweetener will do )
1/2 cup milk
1/4 cup melted butter or coconut oil

Process 1 with cream cheese: Mix graham cracker powder with milk, butter, coconut sugar and 2 tablespoons  honey. Grease  round pie or cake tray nearly 6 inches in diameter and spread this mixture evenly on the tray. Make sure to have raised surrounding edges.
Put the tray in the freezer for 45 minutes.
By that time blend the cream cheese and honey together well. Keep in the fridge for 30 minutes.
Pour the cream cheese mixture on top of the graham crackers and let it set in the freezer for an hour.
During this time whisk the cherry pie filling with 2 tablespoon of honey or  maple syrup and keep in the fridge for 45 minutes.

Then pour this filling on top of the set cream cheese filling and keep in the freezer till the entire thing looks firm and set. This would take nearly 2-3 hours.
If you are using cherry jam with honey then u need to whisk it well till it becomes smooth.

Process 2 with condensed milk and fresh cream: Follow the same procedure for graham crackers.

Whisk the fresh cream and sweet thick condensed milk together and put in the fridge for 45 minutes. Pour it on the graham crackers mixture and put the tray again in the freezer for 2-3 hours.
This mixture will take more time to set.

Then repeat the same procedure for the cherry pie filling.

If you want to make your own cherry pie filling then follow this for four cups quantity:

2/3 cup sugar
1/4 cup cornstarch
1/4 teaspoon salt
4 cups fresh cherries
1-1/2 cups water
1 tablespoons lemon juice

Combine the sugar, cornstarch,water and salt and pour in a large saucepan.
Add the cherries and lemon juice. Bring to a boil.
Cook and stir for 2 minutes or until thickened. Let it cool down.

Once the Cake is ready, you can slice them in 8 euqal portions and serve it.

Note: The cake with fresh cream and condensed milk cannot be kept outside for long as it will melt at room temperature because of the cream and milk combination. So after serving some slices you can again put that into the freezer.
The one with the cream cheese can be stored in the fridge once its set well.
